Pub 'must depose of cooking waste properly'

Pub landlords are being urged not to pour waste oil, fat and grease down drains.

It might interest pub insurance customers to know that the practice can cause sewers to become blocked and damage the environment.

Speaking to the Morning Advertisers, Peter Simpson, chief executive officer of Anglian Water, revealed that the firm, the Chartered Institute of Environmental Health, the Environment Agency and Water UK have launched a charter aimed at highlighting the issue.

He expressed the hope that local authorities will sign up to it and then educate business in their locality "passing on knowledge of good kitchen practice and methods of disposing of waste fats".

Councils should also recognise firms which are taking steps to protect the environment, Mr Simpson added.

Earlier this week, the Campaign for Real Ale warned that one eighth of British pubs are facing closure in the next four years.
