Mark Reeve, manager of the Maid's Head in Wicken was fined £9,900 plus £860 in costs for seven breaches of hygiene regulations which included failing to protect food from contamination and failing to clean equipment
Environmental Health Officers also found saucepans containing mouldy food, dirt in the freezer and grease running down the walls of the kitchen.
Mr Reeve was served with notices requesting him to clean the premises and offered a place on a free council seminar on food hygiene, which he did not attend.
Maggie Camp, senior legal assistant at East Cambridgeshire District Council, said: "We would like this prosecution and fine to serve as a warning to other pub and restaurant owners whose kitchens may be dirty.
"We will do everything in our power to ensure that residents and visitors to the district receive the best service and standards of cleanliness possible and will take action on those who fail to meet the legal standards."
