Pub faces hefty fine over 'filthy' kitchen

One of the UK's largest pub chains faces a hefty fine of up to £20,000 after one of its premises was found to be operating in breach of health and safety regulations, it has emerged.

Health inspectors at the Tickled Trout in Edinburgh found evidence of a rat infestation as well as mouldy, contaminated food in the fridge and a build-up of grease and dirt on worktops.

The pub's owner, Sprit Group, pleaded guilty to breaching hygiene regulations and could be fined up to £20,000.

Diane Turner of Spirit Group admitted that conditions at the pub were not good. She said: "The standards found in this unit are not those which the company would expect and they see these conditions as completely unacceptable," reports the Scotsman.

Sheriff Marie Jarvie said: "This is not something which has happened overnight. Judging by the amount of dirt, this must have been over a prolonged period."
